Savory meat filling for tacos, enchiladas, and any sandwich you might come up with.
Place 12" sauté pan over medium heat and add olive oil.
Once hot, add onions and sauté until translucent.
Add garlic and cumin to pan and sauté until fragrant; about 1 minute.
Add ground beef to pan and cook until meat is browned, constantly breaking into smaller pieces. (about 8 - 10 minutes)
Season mix with salt, chipotle pepper and salt.
Add beef broth and tomato paste, bringing pan to a simmer.
Cook over medium heat stirring occasionally until most of liquid has evaporated. (about 20 - 25 minutes)
I like to divide into meal sized portions and place into Food Saver bags freezing for future use.
