Sift flour
Melt butter in a small pan and stir in flour
Cook for 1 miture stirring all the time
take off heat and gradually add milk, stirring constantly.
When all milk is added turn on the heat and slowly bring to the boil, stirring untill the sauce is thick and smooth.
Turn heat down and add mustard and all the cheeses, stirring untill smooth and creamy.
season with salt and pepper and nutmeg if so desired.
