Add breadcrumbs to milk and set aside
Finely chop or grate onion and mushroom set aside
Whisk egg with spices and cheese
Add egg mixture to meat
Add onion, garlic, and mushroom to meat
Add breadcrumbs and milk to meat
Mix well but don't over work
Form 1 1/2" meatballs
Bake at 425 on cookie sheet for 10-12 minutes until done
Add to sauce, and simmer - cool and freeze - egg as is.
Add/subtract milk & bread crumbs so that meatballs are moist but form well.
