Suggest a better descriptionPut ham hocks in a large pot and cover with cold water to cover by three inches. Peel garlic and onion, cut all in half along with pepper, add to ham hocks. Stir in remaining ingredients. Bring to boil, reduce to simmer for 3 – 6 hours. Skim foam and fat off as necessary. When done remove hocks and set aside to cool. Strain stock and return to pot. Pick the meat off hocks and return to the stock.
Wash and rinse greens several times to remove dirt and grit. Remove center stem.
Fold greens several times and cut with scissors or knife. Add to ham hock stock. Bring to boil, cover, reduce to simmer and cook for 2 hours or until tender. Season to taste.
