adapted from Shut My Mouth Cookbook pg 80. Sweet Potatoes Restaurant-Stephanie's recipe
Bake pie crust @ 350 10 minutes. Combine all with 1/2 of Parmesan cheese. Sprinkle rest on bottom of pie shell. Layer tomato mixture. Top with pimento cheese and bacon. Bake 30-45 minutes.
Note: Bottom crust too soggy, pick pie crust with fork & bake at 450 10-12 minutes. Also sprinkle the tomatoes with the salt and let drain for 10 minutes, drain excess liquid off tomatoes before putting in shell. Shield edges of crust when pie returns to oven @ 350. Wait to cut until sets a little, about 20 minutes. This really has an excellent taste despite the crust issue.
I will make again with the adjustments. I used Stan's pimento cheese. I will add bacon on top.
