Pancake-like apple breakfast bake.
Batter:
Mix the eggs, sugar, flour, baking powder, and milk until smooth. Add the butter, vanilla, nutmeg, and cinnamon. Cover and set overnight in refrigerator.
Apple mixture:
Brush softened butter over sides and bottom of 9x13 baking dish. Combine dry ingredients and sprinkle half of mixture over bottom of pan. Layer apples evenly and sprinkle remaining dry mixture over apples. Bake @ 350 degrees for 20 minutes. Remove from oven and pour batter over apples. Return to oven and bake @ 520 degrees for 15 minutes.
Top w/ ice cream or warm pecan maple syrup.
