- Bake, on bottom rack, for 6 minutes at 375F
- Let cool completely
- Heat cream until steaming
- Stir sugar and cornstarch in a separate bowl
- Stir in yolks, vanilla and salt
- Gradually stir in cream (without too many air bubbles)
- Strain custard through a fine sieve and skim off any residual foam
- Divide evenly among shells
- Bake on bottom rack, for 20 minutes at 325F until centre is slightly jiggly
- Cool to room temperature
- Stir icing sugar with ground cinnamon and sprinkle over tarts
