Place parchment paper on baking sheet.
Lay out the bread and spread mayonnaise on both sides of each pieces of bread. Lay all eight bread slices on parchment in sets of two. On one piece of bread from each set, add 2 slices of cheese, 2 pickle slices, and 2 or 3 slices of salami. Cover each with the other piece of bread from the set. Cut each sandwich in thirds or quarters.
In a pie dish or similar, whisk together the eggs and milk. In another dish add the panko crumbs. Dredge each little sandwich in the egg (both sides), then the panko. Place on the cookie sheet and repeat with all sandwiches. Place in the refrigerator to rest for 1 hour.
Heat oil in large pan to about 365 degrees. You'll want to have about 1/4-1/2 inch of oil, enough to cover about 1/2 of the sandwich. Make sure oil is hot enough otherwise sandwich will soak it up and become greasy.
Cook 2-4 pieces (quarters/thirds of a sandwich) at a time, about 1-2 minutes per side until golden and the cheese is melted.
Remove from the oil to a paper towel lined plate or cooling rack over a paper towel lined baking sheet.
(If you don't want to fry, spray sandwiches liberally with spray oil and bake at 400 til melty.
