Suggest a better description1. Mix shrimp, pork fat, water chestnuts, green onion, ginger, salt, rice wine, pepper, and water well. Add egg white to the mixture; then add cornstarch and mix well.
2. Heat 6 cups of oil in frying pan. Shape the mixture into 1 inch balls with hands and a tablespoon, and fry them in 6 cups of oil until golden brown. Drain and remove to platter. Serve hot. Pepper-salt could be used for dipping.
