A gorgeous easy soup to make in less than 30 mins for the busy people out there, ( plus it is healthy : )! )
So, I literally chop everything very bulky. Place in a medium sized pan ( with lid) and cover with the veg stock. I simmer for around 25 mins stirring occasionally. For the last 5 minutes i add the lardons. I let it rest, blend and serve. This is a very easy quick delicious soup. A favourite for myself and husband! Add salt and pepper to taste.
I am a person who doesn't have the patients to stand and chop everything, this is why I love this soup! I have also added pumpkin and sweet potato depending on what is in my fridge!!
