These pancakes are fluffy!
Stir together first 4 ingredients in a batter bowl. Wisk together last 3 ingredients and slowly blend into flour, being careful not to overmix. (This batter is thick - can thin a little if you like)
Ladel onto greased griddle (about 375 F) and wait for bubbles to form and edges to crisp a little. Flip once until golden brown on the bottom. Makes about 12 pancakes.
