Pre-heat Oven to 400 degrees. Put all of the ingredients and some Olive Oil in a large Zip Lock bag and close it. Shake bag with contents to coat the potatoes with spices. Add Oil to bag as needed. Grease a 13 x 9 glass pan. Add potatoes to pan, spreading evenly, and cook for 45 minutes or until fork tender.
