Prepare 8x10 glass casserole dish with cooking spray
Heat oil in a skillet over medium-high heat. Once hot, add bell peppers, ham, and onion and cook until softened. Evenly pour cooked mixture into class pan.
Combine eggs and salt and pepper (+any other seasoning) in a large bowl. Whisk to combine.
Evenly pour mixture into pan.
Bake for 20 minutes or until liquid has set and toothpick comes out clean. Let cool. Divide onto 4 equal servings.
