Suggest a better descriptionMix the ingredients of the rub together and apply liberally to the slab of pork ribs and set aside. Using a round charcoal grill place the charcoal on two sides leaving space in the middle for a small pan of water. Place a standing rack on top of the grate in the center of the grill to allow the ribs to stand on their side. When the charcoal is white, place pieces of mesquite in the charcoal, place the ribs on the stand for 2 hours maintaining a temperature between 250 and 300 degrees. While the ribs are cooking, in a tinfoil pan mix the ingredients of the bath. After the two hours of smoking the ribs place them in the bath and seal the pan with tinfoil on top. Remove the stand and place the bath back on the grill for 1 hour.
