In a mixing bowl, add all ingredients except honey and oil. Whisk thoroughly.
Add honey and whisk again.
Slowly add the oil while whisking to create an emulsion.
Note from the chef: I've converted the recipe for you so you may have to play with it just a bit to get it right, add a bit more thyme and pepper and maybe a touch more olive oil. We make it in five gallon batches so some of the conversions were a little weird, but here it is.
