Granita is a semi-frozen dessert made from sugar, water and various flavorings. Originally from Sicily, although available all over Italy.
Need a juicer for this recipe!
Juice all the celery, apples and fresh tarragon and pour into a glass casserole dish. Heat the sugar and water together to make a simple syrup, then cool it, and pour it in. Add vodka and stir well.
Freeze! Use a fork every day or so to break it up and make it slushy. If there was too much liquid with the celery and apples, then it''ll freeze thru so add more sugar and vodka (2 teaspoons at a time) and break it up again.
Serve in bowls or a glass with a spoon. Learned this from a cooking class and it''s the best!
