Suggest a better descriptionIn large saucepan, melt 5 tablespoons butter and 1 tablespoon olive oil over moderate heat. Add onion and garlic and sauce until soft and translucent. Add mushrooms; continue to cook until limp. Stir in flour; reduce heat to low and cook, stirring for 3 mins, without allowing roux to brown. Remove from heat and gradually whisk in hot milk and stock. Return to moderate heat, bring to boil and cook, stirring, for 5 min. Add tarragon, pepper, sugar and 1 tsp of the salt. Remove from heat, and one at a time briskly whisk in eggs. Cover sauce partially and set aside.
In skillet, combine tomatoes, tomato paste, wine, basil and remaining salt. Cook, stirring frequently over moderate heat until thick about 15 min. Set aside.
In another skillet, melt remaining 5 tablespoons butter and 1 tablespoons oil. Add chicken, cover and cook for 5 min on each side. Remove from pan, cool and cut into 1/2 inch slices.
Preheat oven to 375 degrees while assembling lasagna: Combine chicken pieces, tomato mixture and white sauce. Spread bottom of lasagna pan with mixture, top with a layer of noodles (fresh ones need not be precooked) more sauce then 1/4 each of the ricotta, Parmesan and mozzarella. Repeat layers 3 more times, ending with the cheese. Bake 45 min to 1 hour or until top is golden brown. Let stand 15 min before serving. Serves 12
