Suggest a better descriptionPreheat oven to 450. Combine 1 tablespoon oil, mustard, salt, pepper and zest and mix well. Combine 1 tablespoon oil, potatoes and onion and toss well. Turn out potato mixture onto a sheet pan and bake for 20 minutes. Add tomatoes and olives to pan and bake for an additional 10 minutes until potatoes are tender. Add mustard mixture and toss to coat.
