Ingredients for 0.7kg (1 quart) at 100% (Net quantity)
1 x / 1oz concentrate of dill with olive oil
2 / 2 eggs
350g / 12.5oz flour white
120ml / 4fl.oz milk
7g / 0.15oz sugar
7g / 0.15oz brown sugar
7g / 0.15oz salt
20g / 0.65oz yeast
15g / 0.5oz dill fresh
Preparation / Pacotize
1. Pacotize one portion of the concentrate of dill with olive oil and melt by warming it.
2. Warm up milk.
3. Melt the yeast and sugar in the warm milk.
4. Sift flour and mix the salt with it.
5. Grease several small moulds or one 2 litre (2 quart capacity) single mould.
6. Chop the fresh dill.
Method
1. Add the milk mixture, concentrate of dill, chopped dill and eggs to the flour.
2. Knead into a dough.
3. Allow dough to rise to double.
4. Fold the dough together and shape individual brioches or make one loaf and put it into the mould.
5. Allow to rise again.
6. Brush with egg and bake at 180�C (350�F).
7. Baking time for brioches approx. 15-20 minutes.
8. Baking time for one loaf approx. 35 minutes.
Note: Dill-brioche is excellent with smoked fish dishes.
