Christmas Cookie
1. In a large bowl, beat butter with electric mixer until creamy. Ad sugar; beat until well-mixed. Beat in egg and peppermint extract.
2. In small bowl stir together flour, cocoa, baking soda, baking powder and salt. gradually beat flour mixture into butter mixture, beating well after each addition.
3. Divide dough in half. On plastic wrap, shape each half into a 7" log. Roll up in plastic wrap and tuck ends under. Freeze at least 45minutes or refridgerate at least 1 1/2hrs.
4. Preheat oven to 350F. Unwrap and cut logs into 1/4" slice. Place 1" apart on ungreased cookie sheets. Bake for 10-12min or until light brown on bottom. Cool.
5. Melt white chocolate according to package directions, being very careful not to overheat as this will cause chocolate to be too thick. Dip cookies into metled chocolate, scraping off excess on side of bowl. Place on wax paper.
6. Immediately sprinkel with crushed peppermnt candies. Cool until firm.
