A mojito variant using turbinado suger (in drink recipe and simple syrup - available in U.S. as Sugar in the Raw) as well as golden rum. It takes a little bit of work (as does any mojito), but it's well worth the effort. See the recipe for "Simple Syrup for Dirty Mojito" which is specifically for this recipe.
Thanks to my friend Jessica for the drink and syrup recipes.
Using a mortar and pestle, combine the sugar and five mint leaves and grind to a paste-like consistency. Squeeze lime juice into the mortar, add simple syrup, and mix. Pour into a tall glass. Add the rum to the mortar (to rinse residual sugar/mint leaves) and pour into glass. Fill the glass to the rim with crushed ice. Top off with club soda and stir to mix the ingredients. Garnish with mint leaf (optional).
