This oh so fluffy candy is divine. There are few candies that are as good as Divinity when it's well made. Most
commercial versions pale compared to this fluffy, lovely candy that melts in the mouth.
Put sugar, karo, and water into a pan and bring to a boil. Stir till sugar is dissolved then cook without stirring until it reaches temperature. Cook until it forms a ball in cold water(hard ball stage), use a candy thermometer and boil over med until it reaches 260 degrees.
While syrup is cooking, beat egg whites and salt till very stiff. When syrup is cooked, pour it slowly in a thin stream over egg whites while beating at medium speed. Add vanilla and continue to beat until stiff and looses the “glossy” appearance and is stiff. This takes a long time, maybe 10-20 minutes with a kitchenaid mixer. Time can vary greatly in the beating process,
don't ignore it for too long.
Fold in nutmeats. Pour onto buttered platter or drop by
spoonfuls onto wax paper or silpat (use wax paper to help spread out on cookie sheet as you have to work fairly quickly).
Cool and cut into squares. Store in an airtight container. Do not make on humid or rainy days, it will not set properly.
Note: you can double recipe if you have a stand mixer like a Kitchenaid.
