Whip the cream with the sugar to make chantilly. Make sure it's as firm as possible. Whip the egg whites into stiff peaks, and then mix the chantilly with the egg whites.
Then on a big dessert bowl, or tray, or individual portion bowls, you will layer the yellow part, the cookies and the white part.
Start with bottom layer being the white mix, then layer maria cookies soaked in coffee, then layer the yellow part. Keep repeating until finished.
