To prepare stir-fry combine water and arrowroot in small bowl and stir until dissolved. Add to other ingreds in saucepan over med heat, bring to boil and reduce to low and simmer 5-6mins until thick.
2. Sesame-Ginger sauce: Combine water and arrowroot in bowl until dissolved. Combine with other ingreds in saucepan over med heat, bring to a boil and reduce to low and simmer 2mins.
3. Peanut sauce: Combine all ingreds in saucepan over med/low heat. Whisk until smooth.
4. To prepare chicken heat 1T oil over med heat. Cook chicken until done 5-6mins per side.
5. Remove chicken and slice into strips. Keep the pan hot. Put back in pan over med/high heat and add the water chestnuts. Heat 1min.
6. Add 5T of stir-fry sauce and heat 2mins. Sauce should be bubbling. Add the onions and stir.
