Heat olive oil in large pot. Dice onions and garlic and brown in the olive oil. Chop tomatoes in blender and add to the browned onions and garlic. Stir in tomato puree and a half can water. Stir in salt, pepper, oregano and parsley. Simmer approximately 3 hours, stirring occasionally. Separate into containers for freezing and let cool.
