I like to mix up my meal plans once in a while and this is just one of my "go to" salads. Hope you enjoy it!
In a non-stick skillet over medium-low heat, add the ground beef. Cook until browned, drain the grease. Place the beef back on the burner. Add the taco seasoning and 1/4 cup water. Stir and simmer for about 10 minutes. Remove from heat. Set aside to cool completely.
In a large mixing bowl, add the vegetables, beans, olives and cheese. Pour the beef over the vegetables and mix well. Add the Doritos and Catalina dressing just before serving. Serve with sour cream if desired.
