Soak urad dhal in warm water in one pot. Soak rice in wamr water in a separate pot. Both should soak for 3 to 4 hours uncovered. Grind in a contents of both pots in a pot until the grains are smooth. Add enough water so that it grinds very smoothly. Pour into a bowl. Salt to taste. Cover and let stand overnight in a warm place. In the morning, the mixture should have risen.
In the winter, it is not unusual that the mixture didn''t rise. If that is the case, turn on the oven to 250 degrees for 15 to 20 minutes. Shut off the oven. Put the dosai mixture in a covered dish on a cookie sheet into the oven. It should rise and be thick and frothy.
Set the electric griddle to 450 degrees and let it pre-heat. If it is a griddle on a stove top, set the dial to 5 or 6. When the griddle is hot, lightly oil it and drop dosai onto it.
Serve with chutney, Curried Chicken, Buttered Chicken, Sambar, etc.
These don''t freeze well.
After dropping dosai unto a griddle, crack an egg on top. Wait a few minutes for the dosai to cook on that side. Flip and cook until the egg is at your liking as in over easy or over hard.
