Sprinkle chicken with salt and pepper; set aside. In a small bowl, combine apple butter, vinegar, oil and apple pie spice. Set aside some apple butter mixture for apples; reserve remaining mixture for chicken.
Place chicken on the grill rack over a drip pan. Brush chicken with the reserved mixture. Cover and grill 5 minutes. Turn chicken; brush again with apple butter mixture. Cover and grill for 5 minutes longer. Discard any remaining apple butter used as the brush-on.
Use a clean brush to brush sides of each apple slice with some of the reserved apple butter. Place apple slices on grill directly over heat. Cover and grill for 10-13 minutes more or until chicken is tender and no longer pink (170 degrees). turning apple slices once. Brush apple slices with the remainder of the apple butter.
Serve apples with chicken.
