Chocolate and Orange combined makes these muffins a real treat! We loved them!

1. Preheat oven to 375 F.
2. Grease muffin tins.
3. Grate rind from orange and set aside.
4. Squeeze juice from orange and pour into measuring cup.
5. Add buttermilk to orange juice until it measures 1 cup liquid. Set aside.
6. Sift together flour, cocoa, baking powder & salt in large bowl.
7. Whisk together eggs, sugar & oil until creamy.
8. Stir in orange rind and buttermilk mixture into egg mixture.
9. Stir liquid mixture into dry ingredients with chocolate chips, stir only until just moistened.
10. Spoon into muffin cups filling 2/3 full.
11. Bake @ 375 F for 20 minutes or until firm to the touch.
12. Cool in pan for 5 minutes before removing from muffin tin to cool on rack.
13. Store in an airtight container.
Freezes well.
