From Cooks Holiday Magazine. Vodka used to cut down on water/four created glutin, which does not form with ethanol in vodka, though the ethanol adds moisture to ease rolling out dough. Of course the alcohol evaporates during baking.
In food processor:
Combine sugar, salt & ONLY 1 1/2 cups of flour for 5 seconds.
Scatter butter & shortening over dry ingredients & process about 15 seconds or until uneven small clumps form with no remaining dry bits.
Scrape down sides and sprinkle remaining 1 cup of flour over the mixture.
Pulse mixture broken into pieces and evenly distributed around the bowl, about 4-6 pulses.
Transfer mixture to a larger bowl and vodka & ice water over mixture. Using a stiff spatula, stir and press dough until it sticks together.
Divide dough in half & form two 4" disks. Wrap in plastic wrap and refrigerate for 1 hour. Let sit out for 10 minutes before rolling out.
Dough may be refrigerated for up to 2 days or frozen for a month (Let thaw completely before rolling.)
