Mix flour, sugar, baking powder, salt and cinnamon. Add eggs, milk, oil and vanilla. Drop batter by teaspoonfuls into hot oil (375 degrees F). Fry 4-5 doughnuts at a time, for 2-3 minutes or until golden brown. Drain on paper towels. Roll in confectioners' sugar, or in mixture of 1/2 cup sugar and 1 teaspoon cinnamon or leave plain, if desired.
