Whisk eggs, milk, flour and sugar till smooth.
Peel and slice the apple.
Use a 10" cast iron skillet over medium heat to melt half the butter. Add the apple slices and sprinkle with brown sugar and cinnamon. Cook for about five minutes. Frequently tossing untill apples are coated, softened and caramelized.
Add remaining butter, let melt. Then add the batter on top.
Bake for 18 - 20 minutes, until pancake has puffed and is golden brown. Center should be set but custardy.
Serve hot with a dribbling of melted caramels.
