Mom's recipe
Saute' the celery & onion in the butter til tender. In the meantime, take turkey neck, liver, & gizzard & boil
slowly til tender; about 2-3 hrs. keeping plenty of water over them to have some broth; at least 2 cups.
Don't let it boil dry. Then add onion & celery mixture to the bread & toss w/ pieces of the turkey meat.
(Don't have to use the liver & gizzards). ADD sage, pepper, salt, garlic salt, (sparingly), & a lot of accent.
(The sage taste should be quite strong because it cooks out in the bread). ADD the broth & if it's not quite
enough to moisten the bread, then add some milk. When you stuff the turkey, don't do it tightly. Put in the neck
cavity as well. Make sure you clean the dressing out of the turkey very thoro'ly or it will spoil.
Dressing should be made a day before so that the flavors will blend.
