Vegan oatmeal cookies with dried cherries instead of raisns
Pre-heat oven to 350 degrees. Line cookie sheets with parchment paper. In one bowl whisk together first 6 ingredients. In another bowl beat with a mixer the next 5 ingredients until well blended. Fold the first mixture into the second mixture. Fold in the dried cherries and then the oats. Shape dough into 1 1/2" balls and place them on the cookie sheet 1 1/2" apart. Bake until cookies are lightly browned. Bake time is 14-15 min. Let cool on a drying rack. Will keep nice and crisp on the outside and soft on the inside.
