Simple fruity cake.
15 minutes or so prep
Chop the prunes to sultana size pieces.
Place all the fruit in a lquid to plump up a bit. Apple or orange juice, or plain water,
Grease and line a 16cm cake tin.
Pre-heat oven to 180°C (fan)
Cream butter and suger until almost white,
Add flour, baking powder, almond essence, and ground almonds, and combine.
Add eggs and mix to a not-quite-dropping consiancy.
Insert into baking tin, level and bake intil done ± 25 minutes.
