For the marinade:
Prepare the marinade at least 24 hours in advance. Put the tenderloin in a gallon plastic bag along with the marinade and let it sit in the refrigerator for 24 hours. Remove about 30 minutes before cooking. If cooking on an outdoor grill, start by searing all sides of the meat at high temperature. Once seared, move it to indirect heat and cook at 300°F until it reaches the desired doneness (140 degrees for medium rare). This will take between 1 1/4 to 2 hours.
You can save the marinade and use as a sauce by boiling it over high heat until it starts to thicken.
For the sauce:
Heat 3 Tbsp of olive oil or butter in a pan. Add the mushrooms and 1 tsp of the salt and cook, stirring occasionally, until they have released their liquid and are golden brown around the edges, about 5 minutes. Add the minced shallots, thyme, and rosemary, and cook until the shallots are soft, about 2 minutes. Add the red wine and cook until almost completely evaporated. Sprinkle the flour over the shallots and mushrooms, and stir to combine. Cook for 1 minute. Add the beef stock and cook for 5 minutes, until thickened. Add 1/2 cup of the heavy cream, stir to combine, and cook until the sauce is thick enough to coat the back of a spoon and the flavors come together, about 6 minutes.
