Cook the noodles according to the packet instructions.
Meanwhile, chop the duck & veg and combine in a bowl. Combine the dressing ingredients in a separate bowl.
Drain the noodles and toss with most of the dressing. Serve the noodles topped by the duck & veg, with remaining dressing drizzled over top.
