Suggest a better descriptionIn a large mixing bowl, whisk together flour, salt and nutmeg.
Add in eggs and milk.
Stir well for several minutes. Batter will be very thick.
Bring a large pot of water to a boil.
Press spaetzle into boiling water using a press. A ricer works as well, or you can press the dough through a wide hole colander with a spatula. Do not overcrowd pot; you will have to cook a few batches.
Stir a few times, cook until it floats and let it simmer for another 3-4 minutes.
Remove spaetzle with a slotted spoon and continue with remaining batter.
Add a tablespoon of butter to bowl of cooked spaetzle to keep it from sticking while cooking remainder. The gluten free spaetzle will hold much more water, so tossing it in a colander in the sink can help get rid of some of the extra liquid.
Serve immediately. If not serving immediately, rinse the spaetzle with cold water. This helps it to stay plump, keep a nicer texture and not get so sticky.
Gluten free spaetzle can be tossed/drizzled with butter or brown butter or served with any sauce or stew you desire. It's not recommend to pan fry with butter, as it tends to clump when pan fried. Serve with sauce or stew of your choice.
