This version of a puffed oven pancake, or Dutch Baby, doesn't puff up as much as the original because the apples are baked in the batter. These are always a special breakfast to serve, but so easy!
Place oven rack in upper third of oven. Preheat oven to 400F.
In a 12 inch cast iron skillet melt butter on range top over medium high heat. Stir in apples, sugar, and cinnamon. Saute until tender, stirring occasionally, 3-5 minutes. Remove from heat.
In a medium bowl whisk eggs until frothy. Whisk in flour until smooth. Whisk in milk and salt. Pour batter over apples in skillet.
Bake until puffed and golden brown, about 25 minutes.
Sprinkle with powdered sugar if desired. Cut into wedges and serve immediately.
