adapted from Foodwishes.com. One recipe makes for 2 large or 4 small servings. Seriously...you'll want the whole thing for yourself. Really good with fruit compote, but the traditional way to serve is with a drizzle melted butter, meyer lemon juice, and powdered sugar.
TIP: forgot to take the milk and eggs out? Place eggs in warm water for a few minutes, and nuke the milk for a few seconds just to take the chill off and walla...room temp.
Preheat oven to 425F.
Add the first 5 ingredients (through salt) to a blender (make sure your eggs and milk are room temp or the baby won't turn out right). Blend on high until very smooth, scrapping down as needed. Reserve till needed.
Preheat 10 inch cast iron skillet on high heat until well heated. Pour in the clarified butter and tilt the pan to cover the bottom of the skillet in butter. Pour the batter into the center of the pan. It should bubble briskly around the edges if pan was properly heated. Carefully transfer skillet in to the center of the preheated oven and bake for about 20-25 minutes, or until puffed and golden (see the picture).
Leaving baby in the skillet, drizzle with butter then use a brush to smooth over everything, drizzle with lemon juice, and sift generously with powdered sugar. Slice and serve.
