Dutch Baby is an oven pancake.r My grandmother made them regularly. This is a huge family favorite served with just lemon juice and powdered sugar. You can also add sauteed fruit during the cooking process for a variation.
Preheat oven to 425 Degrees. Put an oven proof skillet in oven, skillet should be sized to the number of servings. A medium pan for 4 eggs.. If you increase the recipe, increase the size of the pan. Allow for expansion above pan in oven. Once pan is heated, put butter in pan.
When butter is mostly melted, blend eggs for 30 seconds in a blender. Add milk while blender is running,
blend for 30 seconds. Add flour slowly over 30 second period and blend for 30 seconds. Once incorporated, pour into hot pan with melted butter in oven.
Bake in oven till brown 20-25 Minutes. The pancake should crawl up the edge of the pan. Serve with lemon juice and powdered sugar or jam or cinnamon sugar.
Fruit variations: Saute thinly sliced apples in butter until very soft in oven proof pan, then add sugar and cinnamon, cook until caramelized… Put pan in oven with butter from recipe… Pour batter over and bake. You can also use Pears or Peaches.
