Try this East African Sweet Pea Soup recipe, or contribute your own.
Suggest a better description- Sauté onions and garlic in vegetable oil in a covered pot, stirring frequently for 5 or 10 minutes, until onions are translucent. Mix in ginger, salt, and all the spices and sauté a couple of minutes, stirring often. Add tomatoes and sweet potato, stirring well. Add 1 1/2 cups water, stirring to dissolve spices and deglaze pot. Bring to boil, then reduce heat and simmer, covered, for 5 minutes. Add 2 cups of peas and simmer, covered, for another 10 minutes until peas and sweet potato are tender.
- Remove soup from heat and add remaining 2 cups of water. Purée soup in blender or food processor until smooth. Return to pot, add remaining peas, and gently reheat. Serve hot.
