MAKE CAKE---Heat oven to 325 degrees. Butter and flour a Bundt pan. In a bowl, mix flour, baking soda, ginger and salt. In another bowl, beat butter, sugar and zest until light. Beat in eggs. Add minced ginger and vanilla. *Add one third of flour mixture, then half of buttermilk. Repeat. Transfer batter to pan. Bake until done 1 hour 10 min. Let cool in pan 15 min. Invert onto a plate. MAKE GLAZE---Whisk powdered sugar, lemon juice and 3 tbs buttermilk until smooth. Drizzle over cake, let stand 30 min. Place colorful Peeps around bottom of cake. SERVE & ENJOY...
