Many Amish meatloaf recipes originated in Ohio and in neighboring regions. The key ingredient in any Amish meatloaf is two strips of real bacon. It's best to make the actual meatloaf and the sauce separately, and then combine them when each component is finished.
Some Amish meatloaf recipes tend to be sweet, but, if you don't like the sweetness, add more garlic instead to your version.
Preheat the oven to 350 degrees. Then combine the ground beef, Ritz crackers, onion, eggs, garlic salt, ketchup and pepper. Now pack the mixture into a meatloaf pan. Lay the two strips of bacon on top of the pan, and bake it for about an hour.
Then make the sauce. In a medium bowl, combine the ketchup, salt, dry mustard, dark brown sugar and pepper.
Finally, when the meatloaf has cooked for about an hour, take it out and pour the sauce on top of it. Bake for another 15 to 20 minutes. Then take it out, and let sit for about five minutes before slicing and serving.
Swiss Amish Meatloaf:
Build off the recipe above, and add in ½ cup of evaporated milk, ½ teaspoon of dried sage and ½ cup of shredded Swiss cheese. Instead of cooking meatloaf in a regular pan, you can also use an oval-shaped loaf pan.
