Flavorful and easy
Preheat oven to 375 degrees and spray and 8x8 baking dish with cooking spray.
Mix dry ingredients in a large bowl.
Add the wet in ingredients: milk, sugar, egg, coconut oil, vanilla and applesauce. Stir to combine and then add any mix ins you desire.
Pour in the baking pan and scatter remaining ingredients across the top.
Bake for 35-40 minutes, until top is nicely golden. Remove from the oven and let it cool for a few minutes. Portion and serve.
