In a large Pot combine beef broth, onion and roast beef. Let simmer for 30 min. While simmering slice bread and cut into 4 inch sections. Place in oven and toast both sides under broil toast till golden brown. Watch carefully. Remove from oven when warm top with roast beef and provolone cheese. Serve.
You can choose to add a spread of your choice. Garlic mayo, pepper mayo etc. You can also add mushrooms to the broth to cook with the meat. You can use a classic white mushroom if desired.
This is Simi homemade. Good quality roast beef is key. Also a good beef broth makes a huge difference for dipping. You can choose to drain the broth from onion if desired. I also use kaiser rolls from the bakery that really make this... SO GOOD.
