This is a simplified bruschetta that you can make with just a few fresh ingredients. We use the frozen basil and garlic that you can buy at Trader Joe's and we always have balsamic and olive oil on hand. So all we really have to pick up are some tomatoes and a baguette. Instant party starter!
Preheat broiler. Slice baguette into rounds.
In a mixing bowl stir togeter vinegar, salt, and pepper until salt dissolves. Stir in half the olive oil. Toss with the chopped tomatoes, chives/parsley, basil and the garlic.
Brush the remainin olive oil on the bread and broil until golden brown. About 3 minutes.
Heap the tomato micture on each bread slice and serve immediately.
