Campbell's Chicken Noodle Soup and Dumplings
Prepare the Soup
Add the 4 cans of Soup to a large pot with 4 cans of Water and set heat on high.
Prepare the Dumplings
Add the Eggs, Milk and Salt to a large bowl and Mix Well
In a separate bowl combine the Flour and Baking Powder and mix well
Combine all into 1 bowl and mix together. The consistency should be stiff enough to be spoon able without running off the spoon. After I have mixed everything together, I like to add in a ½ cup of frozen peas for additional flavor, but this is not required.
Add in Dumplings
Wait for the Soup to begin to boil and drop a spoonful at a time into the soup. I like to use a cookie scoop and only fill about half the scoop full of batter to drop it into the soup, it’s much easier.
Be advised, the dumplings will start to swell and it may become more difficult to find a spot to drop the batter in, use a large spoon and move the dumplings to the side so you can get them down into the soup.
After you have dropped all the dumplings into the soup, allow it to cook for an additional 5 mins.
Remove from heat and allow to rest for 10-15 minutes. This allows it to cool as well as allow the dumplings to soak up some of those juices. CAUTION!! Remember, this was just boiling, it’s going to be very hot, you may want to let it sit much longer and/or add some ice if you are serving to small children.
