A very delicious authentic Indian curry
Chop and Sauté the onions & garlic in a frying pan, careful not to burn the garlic.
Dice the chicken into pieces.
Gently pan fry the chicken with some sea salt & black pepper
Empty coconut milk and chopped tomatoes into a casserole dish with lid (cast iron is best) & simmer on a hob. You can also use a large saucepan with a lid.
Add the chicken stock cube
Add the onions & garlic
Add the curry powder
Add the garam masala
Add the coriander
Add the crushed chilli flakes
Add a pinch of cayenne pepper
Add the ginger
Add the chicken
Bring to the boil then add the spinach.
Leave on simmer for approximately 1 hr then serve with either rice or cauliflower rice for a carb free option.
