Dissolve mole paste in chicken broth over medium heat. Add chicken chunks and salt. Heat over medium high heat, stirring frequently to keep from sticking, until sauce is medium thick. Heat cooked brown rice in microwave. Serve mole over rice, and add sliced avocado, diced tomatoes, and onion. Use scallions for garnish.
This dish is quite good with a nice Argentine Malbec.
